CHICKEN SCALOPPINE WITH BROCCOLI AND MELTED MOZZARELLA

SERVES 4

You can never go wrong with the winning combination of chicken, broccoli, and cheese. This recipe does beautifully as a weeknight meal or a decadent dinner with friends. Inspired by a dish I love from a local Italian restaurant, my scaloppine is lightened up by reducing the coating on the chicken to just a slight dusting—enough to get good texture once it’s browned. Serve it with a crisp green salad on the side.

2 broccoli spears (about 12 ounces)

3 garlic cloves, smashed

1 tablespoon plus 1½ teaspoons extra-virgin olive oil

1 teaspoon kosher salt

⅔ cup reduced-sodium chicken broth*

¼ cup all-purpose flour*

4 (4-ounce) thin chicken breast cutlets

Freshly ground black pepper

½ teaspoon unsalted butter

Juice of ½ lemon

4 ounces part-skim mozzarella cheese,* thinly sliced

Chopped fresh flat-leaf parsley, for garnish
